If you were starting a new business what payment processor would you use?

I was told that now if a check or money order bounce I have to pay an $8. fee. Yes, even money orders bounce...so I thought about trying something such as pay pal. Someone gave me blinkweb.com to build a website & they mention there are a few payment processors I can use. What do you use & what has your experience been like with them? any comments you have are greatly appreciated.
